Stevie’s unique sound came as much from his hands as from the combination of equipment he used. However, I have been searching for a certain type of pickup that will get me closer to his sound, instead of my American Strat pickups. What type of new production pickups, for a strat, do you guys recommend for an authentic SRV tone?

From my experience;

Van Zandt Rock Pickups really nail his sounds.

Problem is, its hard to know that until you have your amp giving your power tube distortion. Playing an amp quietly with these pickups won't automatically give you those tones, you'll still have to work for them. Once you hear/feel how they react to a non-master volume amp distorting, you'll understand.

Van Zandt Blues sound good...Fralin Blues Specials....Rio Grande Tallboys...Fender Fat 50's. A lot of this is rig dependent..I've played Texas Specials through a Twin that sounded great.
